Corn Tortilla with Jackfruit filling & Avocado dressing
When I first started my health journey, I knew I had to avoid gluten because it upset my stomach so much, but I couldn’t kick the habit of indulging in gluten free breads. It wasn’t until I decided to remove oil from my diet, that I realised how many breads contain oil! Even the fresh, organic breads often have oil in them… and this was one of the most difficult challenges I had faced!!! I was so addicted to bread - and I did not want to give it up! So for a long time, I ignored it! After a while of not getting the results I wanted, I had to face facts and find a way to crack the bread code!
My solution started with buying organic corn tortillas from the shop. They were ok, and helped me reduce how much bread I wanted to eat, but I always felt they were a bit tasteless, and they weren’t big enough to turn into a large wrap…sad face, because… I like a big wrap!
At this point I was facing the concept of making everything I ate from scratch, something I never thought I would EVER do… and at first I tried making raw vegan wraps in the dehydrator. I got a little obsessed with them… but I found that the ingredients required for these also dried out my body quite a bit due to the high amounts of onion/tomato/nuts/seeds etc. What to do?
I finally took the time to invest in making my own corn tortillas from scratch, and I’ve never looked back! These absolutely resolve the wrap/sandwich craving, keep my energy levels up, and do not dry me out like other breads and wraps. They go well with so many different fillings, and they are so nutritious and satisfying! I’m so pleased to share this one with you! This is the best recipe I can recommend to anyone wanting a healthy, easy wrap - you can make them as large as you like - oil and guilt free!
