“Meatballs”, Mashed Potato & Gravy

This was one of the most pleasant surprises I’ve had in a long time. I have been working on the “meatball” recipe for a while, and finally it came together. Please note, there are a minimal amount of chia seeds in this recipe to bind the “meatballs” together. Other recipes I’ve found use different binders including chickpea flour and psyllium husk, but I’ve always found these to be a little too dehydrating for my liking, and the chickpea flours often don’t suit a lot of people, so I have instead used a minimal amount of potato starch and organic rice flour to hold these little babies together. They have a lovely consistency, they don’t fall apart, and they’re a little squishy which I think make the perfect texture!

The gravy I’ve used here is now my go to recipe for gravy, I can hardly believe how good it tastes. Troy and I nearly had an argument about who was going to finish it last night, so that’s saying something! Sometimes the simplest recipes are my favourite… especially when they’re easy enough for anyone to make! To bring this one together, you’ll need to use the Veggie Mince recipe & the Garden Elixir Stock Cube recipe for the gravy. It’s always good to have some of these frozen in the fridge for when you feel like whipping out a recipe like this!
