Vegan “Chiccie” Nuggets
For whatever reason, I get very nostalgic about foods. Chicken nuggets are no exception! I believe I am not alone in this, and they’re always a crowd pleaser, especially with the kids! Here is a really healthy, kid friendly option for chicken nuggets that is oil free, and surprisingly easy and quick to make yourself!
I do not use tofu or soy products, and I find chickpeas tend to feel a little difficult on my digestion, so I’ve made these with JACKFRUIT! They’re so tasty, and perfect for those moments where you just feel like sitting in front of a TV to watch your favourite shows!
I’ve served this with a huge cos salad, fresh sweet potato mash and Raw Tomato Sauce. As always with anything cooked, keep a large salad there to accompany it to keep the meal more alkaline! I hope you and your kids love this recipe as much as we do for an easy mid week healthy meal!
