Supreme Pizza with raw toppings!

Well, it certainly is IN MY OPINION!!! I’ve been experimenting with pizza bases now for YEARS and this one, is by far the best: not only in terms of taste, but texture and minimal biochemistry disruption.

When we cook anything for a long time in the oven, it changes the nature of the ingredients and can lead to an inflammatory response when eaten - particularly cooked tomatoes and grains! Keeping the toppings raw helps to balance this meal a little bit more as far as cooked vs. raw ingredients. The flavour of the ingredients is also better when done like this, the tomatoes burst with flavour, and the capsicums hold their beautiful crunch! The cooked mushrooms and onions are optional, I really liked what they brought as far as flavour and texture go - but of course - be the scientist yourself and find what suits you!

For a long time I used a buckwheat base recipe because it was super quick and easy to make. But every time I had it, I ended up SO dehydrated, it just wasn’t worth it.

The other challenge when making pizzas is finding a consistency that works without using any fats - no oils, no coconut, nuts or seeds. The dough needs to be sticky enough to hold together, but light enough to cook well. ENTER - POTATOES! The texture of this pizza is so desirable - it’s floppy and foldable, but crunchy on the crust - the perfect combination!!

The original inspiration for this came from the Vegan 8 recipe - but I modified it and tinkered with it until I found the perfect combination of flours vs. potato to make this base SIMPLY THE BEST!

Feel free to omit the chilli powder in the pizza sauce and substitute with either more garlic powder or add a tiny amount of salt. You could also add more tomatoes if you prefer the tomato-y flavour and this would also increase the saltiness.

This pizza will be less dehydrating with less chilli - so keep that in mind! But I like a bit of kick to my pizzas so it’s in there for you to try. I’ll come up with some different toppings and put them up as I explore for you! I recommend eating this with a HUGE salad as a dinner meal mid week. This is a great one for sharing with friends on the weekend too! I hope you enjoy this as much as I do!
