Vegan Quiche
This recipe is a Medical Medium recipe I found, and it is such a delight! Warning with this one however, if your digestion is a bit sluggish, it probably isn’t a great option because the chickpea flour is a little demanding to digest and can cause bloating… BUT, if that’s not a problem for you, then try this one out! And of course, always serve with a large salad!
Troy loved this, and was keen for more! The flavours are really the key. Modify the salt content to keep it minimal if you need less, and certainly do not add more than what this recipe says! This one is a great one for meal prep because you really don’t need a very large serving to feel extremely full! You can freeze them as well for easy dinners or lunches.
