Veggie Tikka Curry with Cauliflower Rice

When I first started my nut/seed/oil free journey, I was shocked by just how much the fats affected my energy levels and inflammation. A handful of my wonderful clients gave some things a go themselves, but one particular client wanted to know how best to do a curry without coconut cream/milk or nuts/seeds. At the time, I really didn’t know how to make a curry creamy or taste good for that matter. But alas, I have now found the answer!!!

This delicious curry has NO oils/creams/nuts/seeds and is absolutely deliciously creamy. The secret? PUMPKIN!!!

Troy ate the lot so it can’t be too bad! Feel free to adjust the vegetables to your preference and omit the legumes if you’d prefer!

Serve with cauliflower rice for a lighter/grain free option or serve with a small portion of organic basmati/jasmine rice for something more dense! You may like to pair this with the Carrot & Raisin Salad too!
