Rainbow Bowl with Mango & Chilli Dressing

This is the perfect quick lunch! Delicious, fresh and tasty! Simple grab as many different coloured veggies out of the fridge you can find, and toss them into a bowl with a sweet and spicy dressing! SO QUICK and delicious!

I’ve made suggestions for the types of veggies to put in, but you can really add whatever you wish! If you’re serving this bowl as a meal, ensure you eat large volumes of the veggies to sustain your energy! Otherwise, use half of what I’ve suggested and serve with a side of starchy carbs (sweet potatoes, brown rice etc.) for a very filling lunch!
