Whole Roasted Cauliflower with Harissa Glaze & Butter Bean Purée
Every few months, Troy & I visit some family friends for a special dinner. Every time we go, they have always prepared an amazing dish or five, but I usually do not have it with my dietary preferences. This time we went, they brought out the most incredible looking whole roasted cauliflower… AND I SWORE THEN AND THERE that I would be making my own! I was so taken with how it presented, I made it straight away and this was the result!
I served this low fat version of the recipe with a light, green side salad to balance out some of the acidity from the beans and the chillis! This was SO yummy, we nearly ate all of it but got too full before we could finish it all!
I suggest preparing the Oil Free Harissa Paste before you make the glaze for this recipe! It only takes a couple of minutes and you can use the left overs for meals for the rest of the week! Enjoy!
This is a SHOW stopping meal that looks REALLY impressive and would work well at a dinner party! But it’s so quick and easy to prepare, you could also work it into your staple recipes from week to week! I hope you enjoy it as much as we did!
