Buckwheat Soba Noodle Kimbap
This is the perfect, quick lunch which will keep you full for hours and keeps that energy flowing nicely! I have recently become OBSESSED with Korean cooking shows and the concept of a noodle kimbap surfaced recently…needless to say I couldn’t help but try it out myself!
Nori is a rich source of iodine, which is extremely important for thyroid and metabolic health. Most people don’t enough of it, especially if we are avoiding table salt which, I hope you all are! This one also contains plenty of antioxidants and fibre and the flavour is insanely delicious!
This only takes about 10 minutes to prepare, so it’s quick and easy, and if you make a batch of noodles and the onion mixture the day before, it’s a simple throw together lunch for when you’re short on time! I hope this becomes one of your favourites too!
