Zucchini Bolognaise

This absolutely DELICIOUS Zucchini Bolognaise is so good, you’ll be wondering why you ever made it with meat and pasta!!! This savoury, wholesome, nourishing and super filling meal is just like eating the real thing - in my opinion! You will need to make the Veggie Mince recipe for this one as the base, but it’s surprisingly quick to make if you already have the mince prepped.

This recipe also has NO TOMATOES so it’s low in acid, and sits well on digestion. Spaghetti bolognaise was a childhood favourite of mine, and this is as close as it gets to the real thing that I’ve ever made! PLUS the texture and flavour this packs is quite unbelievable considering it’s made entirely from plants and has NO oil!!!

You can also omit the red wine if you’d prefer not to have it in there or if you’re avoiding alcohol entirely! It’s only 1 tbsp, but might not be worth it if you don’t regularly buy the red wine or prefer not to have it in the house! Try with both and see what you like! It still tastes delicious without it! But please avoid the red wine if you’re currently avoiding alcohol! Stimulating an addiction is never worth it for the flavour, even if the alcohol is cooked off!
