Caesar Salad with Potato Croutons

Since going plant-based, caesar salad has not been a thing I had thought of to make, until this week! I was scratching my head trying to work out how to do this successfully, and the answers just came to me! Potato croutons, roasted chickpea “parmesan” and a butter bean, zesty, creamy caesar dressing!!!

I kept this version fairly simple, but if you wanted to add additional vegetables to it you absolutely could! It’s certainly not as salty as a traditional Caesar salad with the bacon, but this definitely hits the savoury, zesty, salty, crunchy/soft buttons in all the right ways!
