Cos Salad

This salad was first inspired to me when I was working at the Story Bridge Hotel many years ago. At the time, I was very unhealthy, smoking, drinking, and my eating was only as necessary and fuelled by convenience. It was no wonder I was struggling so much back then… but I remember being very fortunate to have met some gorgeous ladies at the pub who were really into their health and fitness. I would often observe what they would eat for their meals, and at one point, I started to pay more attention to what I was feeding myself. I remember distinctly ordering this pie and coleslaw meal as my lunch/dinner for a while, and then all of a sudden, shifting to grilled white fleshed fish and a COS SALAD!

I was probably still eating chips too, but it was a significant improvement for me, and I remember feeling proud of myself for eating a salad. The pub’s version had fetta cheese in it, but here I’ve created a plant-based version that has all the same components, and is equally as delicious, in my opinion! You can eat this as an enormous salad meal, paired with a side of sweet potato if you need a bit more substance, or as the main event to any cooked side dish you like! I hope you enjoy this one and if you’ve just started your health journey, feel as proud as I did for eating this!
