Shaved Fennel & Orange Salad
I was looking for a salad that would compliment a grainy side and this one popped into my head! This delicious, fresh salad is a super digestion promoting meal. The fennel assists in relaxing the smooth muscle of the gut lining to facilitate smoother digestion, and the citrus assists in the breakdown of food in the stomach.
I would use a large serving of this salad to pair with a grainy side dish to balance the acid, and assist with digestion. With my liver as damaged as it has been, grainy food still takes it toll on my digestion which is why I recommend to have it less often, particularly if you have constipation or indigestion. Even if you don’t have these challenges, having a large salad like this on the side will keep the immune system a little happier and support your energy systems!
You can also use this salad as a stand alone meal. I would partner this with a substantial serving of sweet potato or pumpkin as a dinner for optimal energy and satiety.
