Sweet Potato & Dill Salad
After I’ve done a solid gym session, I usually feel like something grounding, filling and substantial. The easiest and quickest way for me to do that is to have some fruit, followed by an epic salad like this! This salad is simple, doesn’t require a lot of ingredients, and is very easy to put together. Try this yourself as a post workout meal, or as a tasty lunch! If you’re transitioning to a plant based diet, this is a great base meal you could add a small portion of poached chicken or roasted beef to as a lunch or dinner. If you’re fully plant based already, eat as much of this one as you like! If you’re looking to do a little lower fat, have a solid serving of fruit first, then have this salad but reduce the portion of avocado or substitute the avocado dressing for a lemon based one instead!
