Oil-free Babaganoush

I love babaganoush. It’s been an on-going love affair since I was in my late teens! I used to buy this very decadent babaganoush from New Farm Deli with glorious toasted Turkish bread and I kid you not, I would eat all of it in one go. A good friend of mine at the time introduced me to this, and the memories I had with him always come flooding back whenever I eat this. Missing his friendship and grieving that part of my life has been a huge part of a strong emotional addiction to breads and dips… And when there’s a craving - I always find a way through it!

This recipes comes VERY close to the New Farm Deli version, minus the fat! In fact, served with the Potato Flat Bread, I will never again miss reminiscing that wonderful time in my life… and even better, I never feel sluggish and bloated afterwards! I hope this brings you just as much comfort!
